OMG Zoodles!

Completely off topic here, but this weekend, I made zoodles.  Basically, noodles made from zucchini rather than flour.

Backing up a step, I’ve been cooking and eating differently lately.  Cutting back on carbs and upping the protein.  Where I can, I try to eat “clean”-er, less-processed foods.  Let’s face it, as a working mom there is no way I can totally avoid all processed foods.

So anyway, I’ve made this cauliflower pizza crust. No picture as mine turned out NOTHING as beautiful as that one, but it was delicious.  I also made this Banana Date paleo bread.  Also no picture, but also delicious.

I made these bacon guacamole “sandwiches”.

How could I forget these babies, prosciutto-wrapped mini omelette muffins with olives and grape tomatoes.

And today I made zoodles!  This julienne peeler makes it SUPER easy (and even kind of fun).  Microwaving the zoodles make them easy to cook.  I just added parmesan, butter, bacon, and peas.  NOM NOM NOM.

    Spaghetti squash. You don’t even need a peeler. Just a spoon.

    Not sure why, but the spaghetti squash never did it for me. And this was FUN! :)
